1 lb large sea scallops, patted dry
2 tbsp olive oil
Salt and black pepper to taste
2 tbsp unsalted butter
1 garlic clove, minced
Juice of 1 lemon
Zest of 1/2 lemon
2 tbsp fresh parsley, finely chopped
1 tbsp fresh basil, chopped
1 tbsp chives, chopped
Optional: crushed red pepper flakes
Pat scallops dry and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear scallops for 2–3 minutes per side until golden and opaque. Remove and set aside.
In the same skillet, melt butter. Add garlic, lemon juice, and zest. Sauté for 30 seconds.
