Ingredients

  • 1 cup sweet corn kernels (fresh, canned, or frozen)
  • 1 cup lump crab meat
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped green onions
  • 1 egg, beaten
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 package puff pastry sheets, thawed

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • In a large bowl, combine sweet corn, crab meat, cheddar cheese, cream cheese, green onions, egg, lemon juice, Old Bay seasoning, garlic powder, salt, and pepper. Mix well.
  • Roll out puff pastry sheets on a lightly floured surface and cut into 3-inch squares.
  • Place a tablespoon of the crab mixture in the center of each square.
  • Fold the corners of the pastry over the filling, pinching to seal and form a pouch.
  • Arrange the puffs on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes, or until golden brown and puffed.
  • Remove from oven and let cool slightly before serving.

Notes

  • You can prepare the filling ahead of time and store it in the refrigerator until ready to use.
  • Serve with a dipping sauce of your choice, such as aioli or sweet chili sauce.
