Ingredients

Scale

For the Sweet Potato Base:

  • 4 large sweet potatoes (about 4 pounds), peeled and cubed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the Pecan Streusel Topping:

  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted

For the Marshmallow Topping (optional):

  • 2 cups mini marshmallows

Instructions

  • Preheat the oven to 350°F (175°C).
  • Boil the cubed sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain and let cool slightly.
  • Mash the sweet potatoes in a large bowl until smooth. Add the melted butter, brown sugar, granulated sugar, eggs, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  • Spread the sweet potato mixture evenly in a greased 9x13-inch baking dish.
  • In a medium bowl, combine the chopped pecans, brown sugar, flour, and melted butter to make the streusel topping. Sprinkle evenly over the sweet potato mixture.
  • Bake in the preheated oven for 25-30 minutes, until the topping is golden brown.
  • If using the marshmallow topping, remove the casserole from the oven after 20 minutes and sprinkle the mini marshmallows on top. Return to the oven and bake for an additional 5-10 minutes, until the marshmallows are golden and gooey.
  • Let the casserole cool for a few minutes before serving.

Notes

  • Make ahead by preparing the sweet potato base and streusel topping separately. Assemble just before baking.
  • Adjust the sweetness by reducing the amount of sugar in the sweet potato base.
