This Sweet & Spicy Korean BBQ Meatloaf recipe fuses classic meatloaf with bold Korean flavors, featuring gochujang, garlic, and a sticky BBQ glaze. Made with ground beef and topped with a sweet and spicy sauce, it’s the perfect comfort food with an international twist. Great for weeknight dinners or make-ahead meals!

Ingredients

  • 1 ½ lbs ground beef

  • ½ cup breadcrumbs

  • 1 egg

  • 3 cloves garlic, minced

  • 1 tsp grated ginger

  • 2 green onions, chopped

  • 2 tbsp soy sauce

  • 2 tbsp gochujang (Korean chili paste)

  • 1 tbsp sesame oil

  • 1 tbsp brown sugar

For the glaze:

  • 2 tbsp ketchup

  • 1 tbsp gochujang

  • 1 tbsp honey

  • 1 tsp rice vinegar

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix ground beef, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, gochujang, sesame oil, and brown sugar.

  3. Form the mixture into a loaf shape and place in a loaf pan or on a lined baking sheet.

  4. In a small bowl, whisk together glaze ingredients: ketchup, gochujang, honey, and rice vinegar.

  5. Spread half the glaze over the meatloaf.

  6. Bake for 35–40 minutes, then spread remaining glaze on top and bake an additional 10–15 minutes, or until internal temp reaches 160°F (71°C).

  7. Let rest 10 minutes before slicing.

Notes

  • Use ground turkey or chicken for a leaner version.

  • Can be made ahead and reheated for easy meal prep.

  • Leftovers make excellent sandwiches.
