Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup salsa
  • 2 cups beef broth
  • 8 oz (about 2 cups) uncooked pasta (penne, rotini, or shells)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, jalapeรฑos, green onions

Instructions

  1. In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned and the onions are soft. Drain excess fat.
  2. Stir in the taco seasoning, diced tomatoes, salsa, and beef broth. Bring the mixture to a simmer.
  3. Add the uncooked pasta to the skillet, stir, and cover. Cook for 12-15 minutes, stirring occasionally, until the pasta is cooked through and most of the liquid is absorbed.
  4. Stir in the shredded cheddar cheese and sour cream until the cheese is melted and the sauce is creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot with optional toppings like chopped cilantro, jalapeรฑos, or green onions.

Notes

  • You can use ground turkey or chicken instead of beef for a lighter option.
  • For extra heat, add a pinch of cayenne pepper or diced jalapeรฑos.
