  • 4 large russet potatoes
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup shredded lettuce
  • 1 diced tomato
  • Optional toppings: sliced jalapeños, guacamole, black olives, or hot sauce

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes, pierce them with a fork, and bake for 45–50 minutes until tender.
  2. While potatoes bake, cook ground beef in a skillet over medium heat until browned. Add taco seasoning and water as directed on the seasoning packet. Simmer for 5–7 minutes.
  3. Remove potatoes from the oven, let cool slightly, and cut them in half lengthwise. Scoop out a portion of the center if needed.
