  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies (Rotel)
  • 1 can (15 ounces) tomato sauce
  • 1 packet taco seasoning
  • 1 cup beef or chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Sour cream and sliced jalapeรฑos (optional, for serving)

Toppings and Garnishes:

  • Diced avocado
  • Sliced green onions
  • Salsa or pico de gallo
  • Hot sauce
  • Lime wedges
  • Tortilla chips

Instructions

  • Preheat your oven to 375ยฐF (190ยฐC).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes.
  • Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
  • Stir in the minced garlic and cook for another minute.
  • Add the uncooked rice, black beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, and broth. Stir to combine.
  • Bring the mixture to a simmer, then transfer it to a greased casserole dish.
  • Cover the dish with foil and bake in the preheated oven for 45 minutes, until the rice is tender.
  • Remove the foil and sprinkle the cheddar and Monterey Jack cheese on top.
  • Return to the oven and bake, uncovered, for an additional 10-15 minutes, until the cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve with your choice of toppings.

Notes

  • Substitute ground beef with ground turkey for a lighter option.
