  • 1 can (13.5 oz) coconut milk

  • 2 tbsp red Thai curry paste

  • 1 tbsp fish sauce (optional)

  • 1 tbsp lime juice

  • 1 tsp brown sugar

  • Fresh cilantro, for garnish

  • Cooked jasmine rice, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Add ginger, garlic, and onion; sauté until fragrant.

  3. Stir in red bell pepper and cook for 2–3 minutes.

  4. Add curry paste, coconut milk, fish sauce, lime juice, and brown sugar. Stir well.

  5. Simmer for 5 minutes, then add shrimp.

  6. Cook shrimp until pink and fully cooked (about 3–4 minutes).

  7. Garnish with fresh cilantro and serve with jasmine rice.
