  • Bacon (chopped)
  • Eggs (large)
  • Parmesan cheese (grated)
  • Heavy cream (optional, for extra creaminess)
  • Garlic (minced)
  • Olive oil
  • Salt and pepper
  • Fresh parsley (for garnish)

Instructions

  • In a skillet, cook bacon until crispy. Remove bacon and set aside, leaving a bit of the drippings in the pan.
  • Add garlic to the skillet and sautรฉ for 1-2 minutes until fragrant.
  • In a bowl, whisk together eggs, Parmesan, and a splash of heavy cream (optional). Season with salt and pepper.
  • Return cooked tortellini to the skillet, toss with bacon and garlic, then remove from heat.
  • Quickly pour the egg mixture over the hot tortellini, stirring constantly to create a creamy sauce without scrambling the eggs.
  • Garnish with fresh parsley and extra Parmesan, and serve immediately.

Notes

  • You can substitute pancetta for bacon for a more traditional carbonara.
  • Be careful not to overheat the eggs when mixing to avoid curdling.
  • Add peas or spinach for a vegetable boost.
