  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi, peeled and sliced
  • 1/2 cup pineapple chunks
  • 1/2 cup raspberries
  • 1/2 cup mandarin orange segments
  • 1/2 cup grapes, halved
  • 1/4 cup apricot preserves (optional, for a glossy finish)

Instructions

  • Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Press the dough into a greased pie dish to form an even crust. Bake for 12-15 minutes, or until golden brown. Let it cool completely.
  • Make the Cream Cheese Spread: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. If desired, add heavy cream for a smoother texture. Spread the cream cheese mixture evenly over the cooled cookie crust.
