For the Base

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 4 cups corn chips (like Fritos)

For the Toppings

  • 2 cups shredded Mexican blend cheese
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup diced red onions
  • 1/2 cup sliced black olives
  • 1/4 cup chopped cilantro
  • Sour cream, for serving
  • Salsa, for serving
  • Jalapeño slices (optional)

Instructions

  • Prepare the Base:
    1. Preheat the oven to 375°F (190°C).
    2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    3. Add the taco seasoning mix and water to the beef. Stir to combine and simmer for 5 minutes.
    4. Stir in the black beans, corn, and diced tomatoes with green chilies. Cook until heated through.
  • Assemble the Bake:
    1. Spread the corn chips evenly in a 9x13-inch baking dish.
    2. Pour the beef mixture over the corn chips, spreading it out evenly.
    3. Sprinkle the shredded Mexican blend cheese over the top.
  • Bake:
    1. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Add Toppings and Serve:
    1. Remove from the oven and let cool slightly.
    2. Top with diced tomatoes, shredded lettuce, diced red onions, sliced black olives, and chopped cilantro.
    3. Serve with sour cream, salsa, and jalapeño slices on the side.
