    • 1 tsp vanilla extract
    • 1 can (12 oz) evaporated milk, chilled
    • 2 tbsp lemon juice

Instructions

  • Dissolve lemon Jell-O in boiling water. Let cool to room temperature.
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9x13-inch baking dish.
  • In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  • Gradually add cooled Jell-O mixture and lemon juice, beating until well combined.
  • In a separate bowl, whip chilled evaporated milk until thick and fluffy.
  • Fold whipped evaporated milk into the cream cheese mixture.
  • Pour the filling over the crust and spread evenly.
  • Refrigerate for at least 4 hours or until set.
  • Cut into squares and serve chilled.
