For the Zucchini Crust:

  • 4 medium zucchini, grated
  • 1 teaspoon salt
  • 2 large eggs, beaten
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

For the Toppings:

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced black olives
  • 1/4 cup chopped onions
  • 1 teaspoon dried oregano
  • Fresh basil leaves for garnish

Instructions

  • Preheat the oven to 400°F (200°C). Grease a baking dish.
  • Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
  • In a bowl, combine zucchini, eggs, mozzarella, Parmesan, Italian seasoning, garlic powder, and black pepper. Press mixture into the prepared baking dish.
  • Bake the crust for 20 minutes or until golden brown.
  • Spread marinara sauce over the crust. Add mozzarella, pepperoni, bell peppers, mushrooms, olives, and onions.
  • Sprinkle dried oregano on top. Bake for another 15-20 minutes until cheese is melted and bubbly.
  • Garnish with fresh basil leaves before serving.

Notes

  • For a spicier kick, add red pepper flakes to the toppings.
  • Substitute toppings to your preference, such as using sausage or different veggies.
