These zucchini ricotta rolls are a perfect, lighter alternative to traditional pasta dishes. Thinly sliced zucchini is filled with a creamy ricotta mixture, enhanced with Parmesan, mozzarella, garlic, and fresh herbs, then rolled up and baked in marinara sauce. For the Zucchini Rolls:

  • 3 large zucchinis, thinly sliced lengthwise (1/8-inch thick)
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Ricotta Filling:

  • 1 cup ricotta cheese (whole milk preferred)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 large egg
  • 2 cloves garlic, minced (optional)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

For the Topping:

  • 1 1/2 cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil or parsley, chopped (optional for garnish)

Instructions

Prepare Zucchini: Preheat oven to 375ยฐF (190ยฐC). Lay zucchini slices on a baking sheet, brush with olive oil, and season with salt and pepper. Roast for 5-7 minutes to soften, then set aside to cool slightly.

Ricotta Filling: In a medium bowl, combine ricotta cheese, Parmesan, mozzarella, egg, garlic (if using), basil, parsley, salt, and pepper. Mix until well combined.

Assembly: Spread a thin layer of marinara sauce in the bottom of a baking dish. Take each zucchini slice, place a spoonful of ricotta mixture on one end, and roll up tightly. Place each roll seam-side down in the baking dish.

Bake: Spoon remaining marinara sauce over the top of the rolls. Sprinkle with the remaining mozzarella and Parmesan cheese. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Serve: Garnish with fresh basil or parsley if desired. Serve warm.

  • Use a mandoline slicer for even, thin zucchini slices.
  • For a low-carb option, use a sugar-free marinara sauce.
