Ingredients

  • 3 cups diced apples (about 3 medium apples)
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts (optional)

Caramel Glaze:

  • 1 cup brown sugar
  • 1/4 cup milk
  • 1/2 cup butter

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • In a large mixing bowl, beat together the sugar, oil, eggs, and vanilla until well blended.
  • In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, stirring until just combined.
  • Fold in the diced apples and walnuts.
  • Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  • While the cake bakes, prepare the caramel glaze. Combine brown sugar, milk, and butter in a saucepan. Bring to a boil, stirring constantly, then remove from heat.
  • Pour warm glaze over the hot cake right out of the oven, allowing it to soak in.
  • Cool before serving.

Notes

  • This cake is even more flavorful the next day as the flavors meld together.
