  • 1/2 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1/2 cup apricot preserves

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
  • Beat in the egg yolk and vanilla extract until well combined.
  • Gradually add the flour and salt, mixing until just combined.
  • Roll dough into 1-inch balls and place on a baking sheet lined with parchment paper.
  • Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
  • Fill each indentation with a small amount of apricot preserves.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
