Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 2 green onions, sliced
  • 1/4 cup sliced almonds or peanuts (optional)
  • 4 large tortillas or wraps

For the Dressing:

  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger
  • 1 clove garlic, minced

Instructions

  • In a large bowl, combine shredded chicken, cabbage, carrots, cilantro, and green onions. Toss to mix.
  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic to make the dressing.
  • Pour the dressing over the salad mixture and toss until evenly coated.
  • Lay a tortilla flat and add a generous scoop of the salad mixture. Sprinkle with sliced almonds or peanuts if desired.
  • Roll the tortilla tightly to form a wrap. Slice in half and serve immediately or wrap tightly for later.
