1 cup Arborio rice
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 small onion, finely chopped
2 cloves garlic, minced
4 cups vegetable broth, kept warm
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
2 tbsp olive oil
2 tbsp butter
Salt and pepper to taste
Lemon zest (optional for garnish)
Heat olive oil in a large pan. Add onion and cook until soft.
