This easy Cajun Sausage and Rice Skillet is a one-pan meal bursting with bold flavors. Made with smoked sausage, Cajun seasoning, and tender rice, it's a quick and hearty dinner perfect for busy nights.

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Cajun seasoning
  • ยฝ tsp paprika
  • ยฝ tsp dried thyme
  • ยผ tsp black pepper
  • ยผ tsp salt (adjust to taste)
  • 1 cup frozen peas (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned.
  • Add diced onion and bell pepper, sautรฉ until softened. Stir in garlic and cook for 30 seconds.
  • Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, paprika, thyme, black pepper, and salt. Bring to a boil.
  • Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
  • Stir in frozen peas (if using) and let cook for 2 more minutes.
  • Remove from heat, fluff with a fork, and garnish with green onions. Serve hot.

  • Adjust Cajun seasoning based on spice preference.
  • Use Andouille sausage for an extra smoky kick.
