This cheesy hamburger potato soup recipe is a rich, creamy, and satisfying dish filled with ground beef, tender potatoes, and melted cheese. A comforting meal that's perfect for family dinners or cold weather!

Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat and set aside.
  2. In the same pot, melt butter and sauté onions until softened.
  3. Sprinkle flour over onions, stirring for 1 minute. Gradually add broth while stirring to create a thickened base.
  4. Add diced potatoes and cook until tender (about 15 minutes).
  5. Stir in cooked ground beef, garlic powder, salt, and pepper.
  6. Reduce heat and add milk and cheese, stirring until melted and creamy.
  7. Adjust seasoning as needed, then serve hot and enjoy!

Notes

  • For extra creaminess, substitute half of the milk with heavy cream.
  • Add a pinch of smoked paprika or cayenne for a kick of flavor.
  • Leftovers can be refrigerated for up to 3 days.
