  • 1 ½ lbs ground chicken
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup diced ham
  • 1 cup shredded Swiss cheese
  • ½ cup mayonnaise
  • 2 tbsp Dijon mustard (for topping)
  • ½ cup panko breadcrumbs (for topping)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground chicken, breadcrumbs, eggs, garlic powder, onion powder, Dijon mustard, salt, and pepper. Mix until well combined.
  • Fold in diced ham and shredded Swiss cheese.
  • Shape the mixture into a loaf and place it in a greased loaf pan.
  • In a small bowl, mix mayonnaise and Dijon mustard for topping. Spread this mixture over the loaf.
  • Sprinkle panko breadcrumbs over the top for a crunchy crust.
  • Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • You can substitute ground turkey for ground chicken if desired.
  • For a low-carb version, use almond flour instead of breadcrumbs.
  • Serve with mashed potatoes or steamed vegetables for a complete meal.
