  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 8 oz penne pasta
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook pasta according to package instructions, drain, and set aside.
  • Season chicken with Cajun seasoning and a pinch of salt and pepper.
  • Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes until golden and cooked through. Remove chicken from the pan and set aside.
  • In the same skillet, add garlic and sauté for 1 minute until fragrant. Add heavy cream and bring to a simmer.
  • Stir in Parmesan cheese and let the sauce thicken for 2-3 minutes.
  • Return chicken to the skillet along with the halved cherry tomatoes and cooked pasta. Toss to coat everything in the creamy sauce.
  • Garnish with fresh parsley if desired, and serve hot.
