  • 1 lb boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

  • 1 1/2 cups cooked pasta (penne or rotini)

Instructions

  • Add chicken breasts, broth, diced tomatoes, tomato sauce, onion, garlic, basil, oregano, salt, pepper, and red pepper flakes to the crock pot.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the crock pot.
  • Stir in heavy cream, Parmesan cheese, and shredded mozzarella until melted and creamy.
  • Add cooked pasta, stir well, and cook for an additional 10-15 minutes on LOW.
