1 lb boneless, skinless chicken breasts
3 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 small onion, diced
3 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
1 1/2 cups cooked pasta (penne or rotini)
Instructions
Add chicken breasts, broth, diced tomatoes, tomato sauce, onion, garlic, basil, oregano, salt, pepper, and red pepper flakes to the crock pot.
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender.
Remove the chicken, shred it with two forks, and return it to the crock pot.
Stir in heavy cream, Parmesan cheese, and shredded mozzarella until melted and creamy.
Add cooked pasta, stir well, and cook for an additional 10-15 minutes on LOW.
Serve warm, garnished with extra Parmesan and fresh basil if desired.
Notes
For a lighter version, use half-and-half instead of heavy cream.
