This Easy Baked Raspberry Cheesecake recipe combines a creamy cheesecake base with fresh raspberries and a sweet raspberry sauce, making it a simple yet elegant dessert for any occasion.

  • 2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup raspberry preserves

Instructions

  • Preheat oven to 325°F (163°C).
  • Mix graham crackers and melted butter, press into the bottom of a springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add eggs, one at a time, beating after each addition.
  • Blend in sour cream and vanilla extract.
  • Pour mixture over crust in the springform pan.
  • Bake for 1 hour or until the center is set.
  • Turn off oven and let the cheesecake cool in the oven with the door slightly open.
  • Refrigerate for at least 4 hours before serving.
  • Before serving, top with fresh raspberries and raspberry preserves.
