  • 1 lb beef sirloin, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tsp Dijon mustard
  • 1 tbsp flour (optional, for thickening)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles, cooked (for serving)

Instructions

  • Heat olive oil and butter in a large skillet over medium heat.
  • Season the beef with salt and pepper and cook until browned, about 3-4 minutes. Remove and set aside.
  • In the same skillet, sauté onions and garlic until fragrant. Add mushrooms and cook until tender.
  • Stir in the beef broth and Dijon mustard. Simmer for 5 minutes.
  • Lower the heat and stir in sour cream. For a thicker sauce, whisk in the flour.
  • Add the cooked beef back to the skillet and simmer for another 5 minutes.
  • Serve over cooked egg noodles and garnish with fresh parsley.
