Ingredients

  • 2 lbs potatoes (Yukon gold or russet), peeled and cubed

  • 4 large eggs, hard-boiled and chopped

  • ยพ cup mayonnaise

  • 1 tbsp yellow mustard

  • 1 celery stalk, finely chopped

  • ยผ cup red onion, finely diced

  • 1 tbsp sweet pickle relish (optional)

  • Salt and pepper to taste

  • Paprika for garnish

Instructions

  1. Boil potatoes in salted water for 10-12 minutes, or until fork-tender. Drain and cool.

  2. Peel and chop hard-boiled eggs.

  3. In a large bowl, combine mayo, mustard, relish, celery, and red onion. Mix well.

  4. Add potatoes and eggs to the bowl and gently fold to coat.

  5. Season with salt and pepper.

  6. Chill for at least 1 hour. Garnish with paprika before serving.
