This Garlic Parmesan Chicken and Potatoes recipe is a savory, one-pan meal featuring juicy chicken, crispy potatoes, and a rich garlic parmesan seasoning. Perfect for a quick and satisfying dinner!

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 2 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C). Grease a large baking dish.
  • In a bowl, toss potatoes with 1 tbsp olive oil, salt, pepper, and half the garlic. Place in the baking dish.
  • In another bowl, mix melted butter, remaining olive oil, garlic, Italian seasoning, paprika, and Parmesan cheese.
  • Coat chicken breasts with the mixture and place them on top of the potatoes.
  • Bake for 35-40 minutes until the chicken is cooked through and potatoes are tender.
  • Garnish with fresh parsley and serve warm.
