2 chicken breasts, cubed
3 medium potatoes, diced
3 tbsp olive oil
4 garlic cloves, minced
1/3 cup grated Parmesan cheese
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large skillet over medium heat.
Add cubed chicken, season with paprika, oregano, thyme, salt, and pepper. Cook for 5-7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, add potatoes and cook for 10-12 minutes, stirring occasionally, until golden and tender.
Add minced garlic to the potatoes and sautรฉ for 1-2 minutes until fragrant.
Return the chicken to the skillet, sprinkle Parmesan cheese over the chicken and potatoes, and toss to coat evenly.
Garnish with fresh parsley before serving.

For crispier potatoes, ensure they are cut into even-sized pieces.
