This loaded cauliflower casserole recipe is a low-carb, keto-friendly dish filled with tender cauliflower, gooey cheese, crispy bacon, and creamy sour cream. Itโ€™s the perfect comfort food for weeknights or holidays!

  • 1 large head of cauliflower, chopped into florets
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup heavy cream
  • 1/2 cup cooked, crumbled bacon
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Steam or boil the cauliflower florets until tender, about 8โ€“10 minutes. Drain well.
  3. In a mixing bowl, combine sour cream, cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Add the cooked cauliflower to the mixture, tossing to coat.
  5. Stir in 3/4 cup of cheddar cheese and half of the bacon.
  6. Transfer the mixture to a greased casserole dish. Top with the remaining cheddar cheese and bacon.
  7. Bake for 20โ€“25 minutes until bubbly and golden.
  8. Garnish with green onions before serving.

Notes

  • To make this dish even creamier, add an extra 1/4 cup of heavy cream.
  • Use turkey bacon as a lighter alternative.
  • Store leftovers in an airtight container for up to 3 days.
