Ingredients

  • Main Ingredients:
    • Chicken: 2 boneless, skinless chicken breasts
    • Pasta: 8 ounces fettuccine or your favorite pasta
    • Sun-Dried Tomatoes: 1/2 cup, chopped
    • Heavy Cream: 1 cup
    • Chicken Broth: 1/2 cup
    • Parmesan Cheese: 1 cup, grated
    • Garlic: 4 cloves, minced
    • Olive Oil: 2 tablespoons
    • Butter: 2 tablespoons
    • Onion: 1 small onion, finely chopped
    • Red Pepper Flakes: 1/4 teaspoon (optional, for a bit of heat)
    • Salt: 1 teaspoon
    • Black Pepper: 1/2 teaspoon
    • Fresh Basil: 1/4 cup, chopped (for garnish)
  • Optional Ingredients:
    • White Wine: 1/4 cup (for deglazing the pan)
    • Spinach: 2 cups fresh spinach (for added greens)
    • Lemon Juice: 1 tablespoon (for a touch of brightness)
    • Mushrooms: 1 cup sliced (for added flavor)

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper, then cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
  • If using, add the white wine to deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to reduce slightly.
  • Pour in the chicken broth and heavy cream, stirring to combine. Add the chopped sun-dried tomatoes and red pepper flakes, if using. Simmer the sauce for 5-7 minutes, until slightly thickened.
  • Stir in the grated Parmesan cheese until melted and smooth.
  • Slice the cooked chicken and return it to the skillet along with the cooked pasta. Toss everything together until well coated with the sauce.
  • If using, add fresh spinach and allow it to wilt in the sauce. Squeeze in lemon juice for brightness, if desired.
  • Serve the pasta garnished with chopped fresh basil and extra Parmesan cheese.

Notes

  • For a richer sauce, you can use a mix of heavy cream and half-and-half.
  • Add mushrooms for an earthy flavor.
  • Adjust red pepper flakes to your preferred spice level.
