Ingredients
Ground Beef: 1 lb
Onion: 1 medium, chopped
Garlic: 2 cloves, minced
Rice: 1 cup long-grain white
Black Beans: 1 can (15 oz), drained and rinsed
Corn: 1 can (15 oz), drained
Diced Tomatoes with Green Chilies: 1 can (14.5 oz)
Tomato Sauce: 1 can (8 oz)
Taco Seasoning: 1 packet (1 oz)
Beef Broth: 1 cup
Mexican Cheese Blend: 2 cups shredded
Olive Oil: 1 tbsp
Salt: 1 tsp
Black Pepper: 1/2 tsp
Cumin: 1/2 tsp
Chili Powder: 1/2 tsp
Cilantro: 1/4 cup chopped fresh (optional)
Instructions
Preheat oven to 375ยฐF (190ยฐC).
In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Sautรฉ until softened.
Stir in rice, black beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, beef broth, salt, pepper, cumin, and chili powder. Mix well.
Bring the mixture to a boil, then reduce heat and simmer for 15 minutes, until rice is tender and liquid is absorbed.
Transfer the mixture to a greased 9x13-inch baking dish. Top with shredded Mexican cheese blend.
Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
Garnish with chopped fresh cilantro, if desired.
