Ingredients

Scale

For the Beef Stroganoff:

  • 1 lb (450g) beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon flour
  • 8 oz (225g) egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Beef:
    • Heat olive oil in a large pot over medium-high heat.
    • Add beef pieces, season with salt and pepper, and cook until browned on all sides. Remove from pot and set aside.
  • Cook the Vegetables:
    • In the same pot, add onions and cook until translucent.
    • Add garlic and mushrooms, cooking until the mushrooms are tender and browned.
  • Create the Sauce:
    • Sprinkle flour over the vegetables and stir to combine.
    • Slowly add beef broth while stirring to avoid lumps.
    • Stir in Worcestershire sauce and Dijon mustard.
  • Combine and Cook:
    • Return the browned beef to the pot.
    • Add egg noodles and bring the mixture to a boil. Reduce heat and let simmer for 10-15 minutes, or until noodles are tender.
  • Finish the Dish:
    • Stir in sour cream and cook for an additional 2-3 minutes until heated through.
    • Adjust seasoning with salt and pepper.
  • Serve:
    • Garnish with fresh parsley and serve hot.

Notes

  • For a richer flavor, use a combination of beef broth and red wine.
  • You can substitute Greek yogurt for sour cream for a lighter version.
