This One Pot Chicken Orzo Recipe combines tender chicken, creamy orzo, and fresh veggies in a single pot for a hearty and delicious meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup spinach (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 small onion (diced)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet or pot over medium heat.
  • Season chicken with salt and pepper, then cook until golden and fully cooked. Remove and set aside.
  • In the same pot, sautรฉ onion and garlic until softened.
  • Add orzo and toast for 1-2 minutes.
  • Stir in chicken broth, diced tomatoes, oregano, and red pepper flakes. Bring to a simmer.
  • Return the chicken to the pot and cook for 10-12 minutes, stirring occasionally, until orzo is tender.
  • Stir in spinach and Parmesan cheese, then cook for another minute.
  • Serve hot and garnish with additional Parmesan if desired.

  • Substitute spinach with kale or omit for a simpler dish.
