This one-pot French onion pasta recipe combines the bold flavors of caramelized onions, tender pasta, and melty cheese for a cozy, easy-to-make dish.

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 cups beef broth
  • 12 oz pasta (fettuccine, linguine, or spaghetti)
  • 1 cup shredded Gruyรจre cheese
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup heavy cream
  • Fresh thyme or parsley for garnish

Instructions

  • In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add sliced onions and sautรฉ for 15-20 minutes until deeply caramelized, stirring occasionally.
  • Add minced garlic, sugar, salt, and black pepper, cooking for 1-2 minutes until fragrant.
  • Pour in beef broth and bring to a boil. Add pasta and cook according to package instructions, stirring occasionally to prevent sticking.
  • Once pasta is cooked and most of the liquid has reduced, lower the heat.
  • Stir in Gruyรจre, Parmesan, and heavy cream until cheese is melted and sauce is creamy.
  • Garnish with fresh thyme or parsley and serve warm.

Notes

  • Use vegetable broth for a vegetarian-friendly version.
  • Swap Gruyรจre with Swiss cheese if desired.
  • Add a splash of white wine for extra depth of flavor while caramelizing onions.
