2 tbsp unsalted butter
2 tbsp olive oil
3 large yellow onions, thinly sliced
3 cloves garlic, minced
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
8 cups beef broth
12 oz pasta (fettuccine, linguine, or spaghetti)
1 cup shredded Gruyère cheese
1/2 cup Parmesan cheese, grated
1/4 cup heavy cream
Fresh thyme or parsley for garnish
Instructions
In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add sliced onions and sauté for 15-20 minutes until deeply caramelized, stirring occasionally.
Add minced garlic, sugar, salt, and black pepper, cooking for 1-2 minutes until fragrant.
Pour in beef broth and bring to a boil. Add pasta and cook according to package instructions, stirring occasionally to prevent sticking.
Once pasta is cooked and most of the liquid has reduced, lower the heat.
Stir in Gruyère, Parmesan, and heavy cream until cheese is melted and sauce is creamy.
Garnish with fresh thyme or parsley and serve warm.
Notes
Use vegetable broth for a vegetarian-friendly version.
Swap Gruyère with Swiss cheese if desired.
Add a splash of white wine for extra depth of flavor while caramelizing onions.
