  • 1 large egg
  • 1 ½ cups fresh or frozen cranberries, chopped

  • In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together orange juice, orange zest, oil, and egg.
  • Add wet ingredients to the dry ingredients and mix until just combined.
  • Fold in the chopped cranberries.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
