  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup Rolos, halved
  • 1/2 cup caramel sauce (optional for drizzling)

Instructions

  • Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  • In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  • In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  • Add the vanilla extract and mix until combined.
  • Add the eggs, one at a time, beating well after each addition.
  • Fold in the sour cream until the mixture is smooth.
  • Gently fold in the halved Rolos.
  • Pour the cheesecake filling over the crust and spread evenly.
  • Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  • Let the cheesecake bars cool completely at room temperature.
  • Refrigerate for at least 3 hours or until fully chilled.
  • Drizzle with caramel sauce before serving, if desired.
