Ingredients

  • 1 lb smoked sausage, sliced

  • 2 large sweet potatoes, peeled and cubed

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 3 tbsp honey

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp Dijon mustard

  • 1 tsp apple cider vinegar

  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).

  2. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.

  3. While potatoes roast, mix honey, garlic, soy sauce, mustard, and vinegar in a small bowl.

  4. In a skillet, heat remaining oil over medium heat. Add sausage slices and cook until browned, about 5โ€“7 minutes.

  5. Remove sweet potatoes from oven, add sausage and pour honey garlic sauce over. Toss everything to coat.

  6. Return to oven for another 10โ€“15 minutes until caramelized and tender.

  7. Garnish with chopped parsley if desired. Serve hot.
