Ingredients

Scale
  • 1 lb steak (sirloin or ribeye, sliced)
  • 12 oz fettuccine or pasta of choice
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ cup crumbled Gorgonzola cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: fresh parsley and extra Parmesan for garnish

Instructions

  • Cook the pasta: Boil pasta in salted water until al dente. Drain and set aside.
  • Sear the steak: Heat olive oil in a skillet, season steak with salt and pepper, and cook until browned. Remove and set aside.
  • Make the sauce: In the same skillet, melt butter. Add garlic and sauté until fragrant. Stir in heavy cream and bring to a simmer.
  • Add cheese: Slowly whisk in Parmesan and Gorgonzola until melted and creamy. Season with Italian seasoning, salt, and pepper.
  • Combine: Toss cooked pasta in the sauce, add the steak, and mix well.
  • Serve: Garnish with parsley and additional Parmesan before serving.

Notes

  • Substitute Gorgonzola with blue cheese if preferred.
  • Adjust the consistency of the sauce by adding pasta water.
  • Best served fresh, but leftovers can be stored in the fridge for up to 2 days.
