Ingredients

  • Chicken breasts (boneless, skinless)
  • Mushrooms (sliced)
  • Asiago cheese (grated)
  • Heavy cream
  • Chicken broth
  • Garlic (minced)
  • Olive oil
  • Butter
  • Fresh thyme (optional)
  • Salt
  • Black pepper
  • Fresh parsley (optional, for garnish)

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat.
  2. Sear the chicken breasts for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add butter and sauté mushrooms until softened, about 4-5 minutes.
  4. Stir in minced garlic and cook for 1 minute.
  5. Add chicken broth and heavy cream, scraping up any browned bits from the skillet. Simmer for 2-3 minutes.
  6. Stir in grated Asiago cheese until melted and the sauce is creamy.
  7. Return chicken to the skillet and spoon the sauce over the top. Cook for another 2-3 minutes until heated through.
  8. Garnish with fresh parsley or thyme and serve hot.

Notes

  • For a richer flavor, substitute half the heavy cream with white wine.
  • Asiago cheese can be swapped with Parmesan or Gruyère if preferred.
  • Serve with pasta or mashed potatoes to make the most of the creamy sauce.
