  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  • In a skillet, heat olive oil over medium heat. Sear the beef bites until browned, about 2–3 minutes per side.
  • Transfer the seared beef to a slow cooker.
  • Add the baby potatoes to the slow cooker.
  • In a small bowl, mix melted butter, minced garlic, paprika, onion powder, dried parsley, thyme, salt, and pepper. Pour over the beef and potatoes.
  • Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until the beef is tender and potatoes are cooked through.
  • Garnish with fresh parsley, if desired. Serve warm and enjoy!
