  • 1 medium onion, chopped
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 medium russet or Yukon Gold potatoes, peeled and diced
  • 3 tablespoons butter
  • ¼ cup flour (for thickening)
  • 4 cups chicken or beef broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese (sharp for best flavor)
  • 4 oz cream cheese, softened
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • Optional: Cooked and crumbled bacon for garnish

Optional Garnishes:

  • Diced pickles
  • Diced tomatoes
  • Green onions or chives
  • Sour cream

Instructions

  • In a large pot, brown the ground beef over medium heat. Drain any excess fat and set aside.
  • In the same pot, melt butter and sauté onions, carrots, celery, and garlic until softened.
  • Stir in flour to make a roux, cooking for 1-2 minutes.
  • Gradually add broth, stirring to combine. Add diced potatoes and bring to a simmer.
  • Cook for 15-20 minutes, until potatoes are tender.
  • Stir in milk, cheddar cheese, and cream cheese. Stir until the cheeses are fully melted and the soup is creamy.
  • Add the cooked ground beef back into the soup and season with salt and pepper.
  • Serve hot, garnished with optional bacon, pickles, tomatoes, chives, or sour cream.

  • For extra cheeseburger flavor, don’t skip the pickles and bacon garnish.
