  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks

  • 1 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 2 tablespoons apple cider vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 3 celery stalks, diced

  • 1/2 cup red onion, finely chopped

  • 3 hard-boiled eggs, chopped

  • 1/4 cup sweet pickle relish

  • Paprika for garnish (optional)

Instructions

  • Boil potatoes in salted water until tender, about 10-12 minutes. Drain and cool slightly.

  • In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.

  • Add potatoes, celery, onion, eggs, and relish to the bowl. Gently toss to coat.

  • Chill for at least 1 hour before serving.

Notes

  • You can substitute Greek yogurt for half the mayo for a lighter version.
