2 pounds Yukon Gold potatoes, peeled and cut into chunks
1 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
3 celery stalks, diced
1/2 cup red onion, finely chopped
3 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
Paprika for garnish (optional)
Boil potatoes in salted water until tender, about 10-12 minutes. Drain and cool slightly.
